I don't know if anyone has heard of ebelskivers, I hadn't until I met the Cox family. One of the first times I was at the Cox home Jeanette made them for Trevor's 22nd birthday. They were so yummy and I've been wanting to make them since then. They are kind of a process to make, but they turned out really good! They are kind of like waaay yummier version of pancakes with a carmel-like syrup. I'm really enjoying cooking and being a wife. So here are a few pictures of me cooking ebelskivers and how they turned out.

Jenny, How wonderful! Finally a granddaughter is turning Danish on me, yea! My Bestamore used to make them for me when I was a little girl. Then my mother made them, but not often enough for us kids. She felt it took too much time. I've never had an ebleskiver pan so I haven't tried them. Now we are diabetic and I shouldn't be cooking and eating them, but I know they are yummy. We used to just eat them sometimes with powdered sugar on them.
Yum! I want the recipe too. But do you have to have that special pan?
I love your blog so that I can see what you're up to. And I love that you and Trev have so much fun together. Wish we could join in on a date night sometime!!!
